Swiss love their raclette
Eating raclette is becoming ever more popular in Switzerland and abroad. Production of the cheese, usually melted over hot potatoes, reached record levels last year.
Raclette Suisse, the producer’s association, announced on Thursday that 10,218 tonnes of the cheese were produced in 2000, up six percent over the previous year. Raclette’s share of the domestic market rose more than any other Swiss cheese last year.
Raclette is currently the second best selling cheese on the Swiss market, just behind Gruyère, which is the basis of that other Swiss classic meal, fondue.
Consumers abroad are also increasingly enticed by the aroma and taste of raclette. Exports showed a huge rise in 2000, gaining 40 per cent to reach 501 tonnes.
Almost half of those exports were to Germany.
