Researchers seek ideal potato for Rösti.
In Switzerland, there are around 30 potato varieties sold in supermarkets, all introduced during the 20th century. Government researchers are currently testing new varieties from different European countries to see if they are suitable for Swiss consumers favorite potato dishes – crisps, fries and Rösti.
